Whether it’s on a dessert or a main dish, cannabis is a popular flavouring in many local dishes.Cannabis is becoming increasingly popular in the kitchen. So much so that one of North America’s best cannabis chefs is now traveling across Canada to give seminars and teach chefs how to cook well with cannabis. This is not a fad. It’s not a niche, says chef Travis Petersen. This will be there for a long time. This is a new frontier in the culinary world. Petersen competed on the reality show MasterChef Canada and went on to found The Nomad Cook, a culinary brand that aims to introduce cannabis to the culinary world. When most people think of culinary cannabis, they think of brownies, he told Global News. There’s nothing wrong with the brownie, but it just got a lot more sublime. Petersen was in Kelowna this week, hosting a workshop for local chefs at Vice and Virtue Brewing Company to teach them how to cook responsibly with cannabis. The goal of the workshop is to provide chefs with a certificate in culinary cannabis. Never before has an ingredient carried so much responsibility. Petersen said there are some misconceptions about cooking with cannabis, and he hopes to change them. It’s more about how I can improve your dining experience. How can I get you a new perfume? How can I, how can we use THC and CBD to make you feel a little bit better while you’re sitting there. Some people think it’s just about getting in and getting high, but it’s much more than that, he said. Petersen is also hosting pop-up dinners as part of a tour of Canada where attendees can sample culinary cannabis. He stated that these events are so popular that they sell out quickly. My average age is 39, 57% are women, and 15% of my guests are first time cannabis users, which is a huge and very interested demographic. Petersen said that while Canada was the first country to fully legalize cannabis, the culinary aspect of cannabis has not evolved with it. We haven’t made any progress with the edible part yet, he said. We are now seeing states like Arizona, where legalization is only three months old, begin to surpass what we have achieved in Canada in three years. Petersen is hosting 18 workshops across Canada and hopes to certify 200 Canadian chefs in culinary cannabis. My goal is to wake up the culinary institutions in Canada and tell them it’s time to offer these programs, he said.
